Ingredients
For the Meatballs:
1 lb ground chicken or ground turkey
½ cup almond flour (low-carb binder)
1 large egg (or flax egg / ricotta as binder alternative)
2 cloves garlic, minced
¼ cup Parmesan cheese, grated
1 Tbsp fresh parsley, chopped
½ tsp Italian seasoning
½ tsp salt
¼ tsp black pepper
For the Sauce:
2 Tbsp olive oil or butter
3 cloves garlic, minced
½ cup sun-dried tomatoes, chopped (oil-packed, drained)
1 cup chicken broth (low-sodium)
1 cup heavy cream
½ cup Parmesan cheese, grated
1 tsp Italian seasoning
¼ tsp red pepper flakes (optional)
Salt & black pepper, to taste
Fresh basil or parsley, for garnish

Instructions
1. Make Meatballs: Mix all meatball ingredients in a bowl until just combined. Form into 1-inch balls (about 15–16). Place on a parchment-lined baking sheet and bake at 400°F (200°C) for 18–20 minutes, until golden and cooked through.
Make Sauce: In a skillet, heat olive oil over medium. Add garlic and sun-dried tomatoes, sauté 1–2 minutes. Stir in chicken broth, simmer 2–3 minutes. Lower heat, add cream, Parmesan, Italian seasoning, and red pepper flakes. Simmer until thickened (5–6 minutes).
Combine: Add baked meatballs to skillet, spoon sauce over, and simmer another 3–4 minutes.
Serve: Garnish with fresh herbs. Best with zucchini noodles, cauliflower mash, or roasted veggies.
