You don’t have to be Greek to appreciate a really good tzatziki dip…😁
And I’ve got a Tzatziki Dip recipe for you that’s simple, easy, and so delicious!
Here’s what you need:
• 2 cups Greek yogurt
• 1 medium sized cucumber
• 3 – 4 garlic cloves, or to your liking (I used Egg Man’s Original Pickeled Garlic in mine!)
• Juice of half a large lemon
• 1 Tbsp of finely chopped dill or mint (I used dried dill, but you can use fresh too)
• 1 cup (or to taste) of quality extra virgin olive oil
Grate the cucumber, sprinkle with 1/2 teaspoon of salt and allow to drain in a strainer for 10 – 30 minutes, depending on how watery your cucumber is.
Squeeze the juices out by cupping the grated cucumber in your hands and then add to a bowl.
Crush the garlic with a garlic press and add to the bowl.
Add the yogurt, lemon juice, herbs and mix well.
Drizzle generously with extra virgin olive oil and serve with pita chips, pretzel sticks, or veggies. ENJOY!
[Music] Hi friends. Today we made a really delicious and easy, super easy taziki sauce. Now, if you love Greek food and you like taziki sauce when you go to a Greek restaurant like I do, here’s the recipe so that you can make it at home. Super easy and simple ingredients. You guys are going to love it. Welcome back to the kitchen with Tabby. Let’s get cooking. All right, friends. Let’s get this taziki sauce put together. Now, I made this probably over a year ago. It was not long after I started my page, and I did not get a picture of it because I made it when I was down in Tennessee with my nephews, my great nephews, and we were so busy eating it that we didn’t get a picture. But I want to put it in my new cookbook, Tappy’s Kitchen Favorites that I’m working on. And so, I want to get this done so I can get a good picture of it so we can put it in the cookbook because it is so delicious. Now, it is such a simple recipe, you guys. So, so easy. So, I took one English cucumber and I ran it through my cheese grater. I just put my little larger blade on there and grated it up. And then after I did that, I put it in a colander, sprinkled a little bit of salt on it, and I let it sit for about 30 minutes. And I let some of that juice run out of those cucumbers. And then I dumped it into my bowl. So, that’s all that’s done here so far. A little bit of salt on there. So, that’s the only seasoning so far. Now, what we’re going to do is take some of Eggman’s pickled garlic. This is just the original pickled garlic. Not the sweet, not the strawberry shortcake, just regular pickled garlic. And I took the recipe calls for about four garlic cloves. Three to four or to taste. So, I did about six cuz I like a lot of garlic in my taziki. So, I just chopped it up with my little paper chopper. And we’re going to dump that in. Now, you can chop that garlic up or mince it up as fine as you want or you can use regular garlic cloves, mince them up, or you can use garlic. So, if you don’t have the Eggman pickled garlic, which I highly encourage you to get it cuz it’s very delicious, but if you don’t have it, just use some plain garlic or use some of your garlic. That totally works fine. Next thing we’re going to add is just some plain Greek yogurt. And we need two cups or about half of this container. This is a 32 oz container. So, we’re going to put about half of it in here. That looks about right. So, that’s in. Now, we’re going to add the juice of half a lemon. This was just half of a large lemon. We’re going to put all that juice in there. All right. Next thing we’re going to do is a tablespoon. You can use mint or dill. I prefer the dill. You can use fresh dill if you want and chop it up fresh. I’m using dried. So, I’m just going to do one tablespoon. I think that’s about all I have left in here. Yep. Look at that. God is so good to me. So, I’m just going to sprinkle that one tablespoon of dill in there. And like I said, if you don’t like dill, you can use mint, some dried mint or some fresh mint. All right, that’s what it’s looking like. And so, we are going to give this a mix. Get this all mixed up really good. I noticed after I came out with my cookbook called Mix It Up, I noticed I say that a lot in my videos. Mix it up. Let’s mix it up. So, I think I named that cookbook pretty appropriately. This is such a fun dip to have for your tailgating parties or to take to a gathering. If you’re going to a a gathering or a dinner party or something, you can take this with you and I promise you, you will be a hit. Look at how beautiful that is. That’s a nice texture. Oh, that is going to be so good. Last thing we’re going to do is take some really good extra virgin olive oil and we’re just going to drizzle it right over the top. And I’m going to take my spoon out kind of to the side here. There we go. So, I’m just going to drizzle this all over the top. We’re not going to mix it in. We’re just going to drizzle it on the top and it will just get mixed in as you serve it and as people dip out of it. You just want to drizzle a nice amount. Now, the recipe calls for a cup. You can put however much you want. And there it is. Isn’t that beautiful? And I love my little vintage Pyrex bowl. This is the Cinderella pattern. Love this pattern. All right, let’s get some of these dots. I’m using the dots parmesan garlic pretzels. And we are going to give it a taste. I’m probably going to use two pretzels. That way I can get a little bit more on there. All right, here we go. [Music] Look at that. Oh, you guys, it smells so good. That olive oil is dripping off of it. Oh my goodness, my mouth is watering. All right. Thank you, Lord, for this food. Amen. Oh my goodness, that is so delicious. That is so good. Let’s just do that one more time. You know, since it’s just me and you [Music] at that, you guys have got to try that. If you love Greek food like I do, if you love taziki sauce like I do, whenever we go to a Greek restaurant, I always get the taziki sauce. I never know if I’m saying it correctly, but I think I’m close. But anyway, if you love it like I do and you want to make it at home, this should be your go-to recipe.
