There’s nothing more refreshing in the summertime than a sweet watermelon. You might not think of a salad made with cubes of watermelon and vine-ripe tomatoes, but the combination is perfect, especially with the tangy flavor of Greek feta. I like to add red onion and toasted pistachios with a spicy dressing for one of the best salads of the summer. A variation is to substitute the tomatoes with slices of peaches or plums. To save time, slice the watermelon a day ahead and make the dressing. When you’re ready to combine everything, you’ll have a refreshing salad that you’ll never forget.

One of my favorite summer salads is tomato and watermelon salad. They are just two fruits that complement each other so well. So, I get a fresh watermelon and I cut it up. I like the seedless ones. And then I cut up some ripe tomatoes. I’m going to combine it all in this bowl. And then I’m going to add some feta, which gives it a really kind of a tangy salty bite. Little red onion sliced up. some pistachios. I love fresh pistachios. I put in some mint and some fresh basil. I made a little dressing. This is made with champagne vinegar, olive oil, little honey, and I’m going to drizzle that on. I’m going to toss this all together and it’s makes an amazing salad.
