🌿 Lentil Soup Recipe (Serves 4–6)
Ingredients
• 2 teaspoons olive oil
• 1 onion, chopped
• 2 garlic cloves, minced
• 1 large carrot, chopped
• 2 celery ribs, chopped
• 1 capsicum (bell pepper), chopped
• 2 cups dry brown lentils, rinsed
• 6 cups water (or vegetable broth for more flavor)
• 1 tablespoon paprika
• 1 ½ tablespoons plain flour
• ½ teaspoon vegeta vegetable stock
• ½ teaspoon salt (or to taste)
• ¼ teaspoon black pepper
Instructions
1. Sauté the veggies:
Heat olive oil in a large pot over medium heat. Add onion, garlic, carrot, celery, and capsicum. Cook for 4–5 minutes until softened.
2. Add spices & flour:
Stir in paprika and flour. Cook for 1 minute to coat the vegetables and remove the raw flour taste.
3. Add lentils & liquid:
Add rinsed lentils and water (or broth). Stir well, bring to a boil, then reduce heat to medium-low.
4. Simmer:
Cover and simmer for about 30 minutes, stirring occasionally, until the lentils are tender.
5. Serve:
