It may not look like much but it’s incredibly satisfying as my early dinner before intermittent fasting.
1/2 cucumber
1 medium carrot (lightly steamed)
1/2 small beetroot (lightly steamed)
1 small tomato
2tbsp skyr (~12g protein)
1tbsp fresh kimchi
Pinch of black salt and pinch of pepper
Been having some version of this kimchi salad for almost a week and it’s filling, satisfying and meets my daily calorie limit. I taper my calories as the day goes on. Found I was getting a small headache as I began the 1200 calorie diet so I supplement this with coconut water. Headache gone and I feel great!
If you have any other suggestions, they’re very welcome!

It’s approx 125 calories total because the skyr is made of skim milk.
