Sadly she passed last year, but her welsh cakes were incredible. We inherited her hand written cook book and here is my attempt at her welsh cakes. 🏴

Love Welsh cakes. My ex mother in law always swore it had to be half lard and half butter and her Welsh cakes were the absolute best. I’ll definitely have to try these and maybe sub half the butter for lard 😉

these look interesting! might have to give it a try- something new and doesn’t look difficult. not a fan of sultanas, though, so maybe i’ll sub dried cranberries. unless anyone has better ideas…

Oh, man, neighbour, when I lived in Swansea my favorite breakfast on a Saturday was Welsh cakes fresh off the griddle at the Covered Market… Diolch yn fawr!

I love them too, my mum’s recipe had a bit of mixed spice in to. Castor sugar was sprinkled over them whilst they were still warm. Lovely jubbley.
