Recipe: Roasted Pepper Salad with Cod
Prep Time: 24 hours (for desalting the cod)
Cook Time: 40–50 minutes
Serves: 6 people
Ingredients:
• 6 red peppers
• 300 g salted cod
• 2 cloves garlic
• Extra virgin olive oil
• Salt
• Black olives
Instructions:
1. Desalt the cod: Soak in cold water for 24–36 hours, changing the water several times. Refrigerate during this process. Once ready, flake into small strips.
2. Roast the peppers: Place whole peppers on a baking tray, drizzle with olive oil, and roast at 200°C (390°F) for 40–50 minutes, turning halfway. Remove, cover with cling film, and let them sweat.
3. Peel the peppers, remove seeds, and tear into strips.
4. Place pepper strips in a bowl or dish.
5. Add the flaked cod.
6. Slice garlic and add on top.
7. Drizzle generously with extra virgin olive oil.
8. Mix well and let rest for at least 1 hour to blend flavors.
9. Garnish with black olives if desired.
10. Serve at room temperature with fresh bread.
