Took inspiration from Erin Jeanne McDowell’s recipe for smoked salmon breakfast buns in her Savory Baking book. Sometimes my family can’t keep up with the sweets I want to bake, so it was fun to do the technique for cinnamon rolls but to have it as a more filling meal. Next time I make, I will try to increase the filling a little and perhaps serve with a bechamel sauce as a savory “frosting”.

    I do the same and play with different fillings. Sometimes sweet, sometimes savory. Turns out pretty good if I say so myself. Experimentation is always fun!

    That looks great on this chilly ass September-evening. Some great variations come to mind from your use of lots of scallions (a wicked good choice), such as duck and scallion buns with a hoisin glaze. Kind of cinnamon rolls meet bao buns. Think I just figured out my wife’s next birthday dinner. Thanks. Stoked.
