One of the best things about sushi is you get all of the different flavors in each bite. While this undoubtedly tastes good, it sort of misses the point – giant bite of tuna, giant bite of rice, followed by huge mouthful of wasabi

It’s the same problem as massive burgers really, the whole point is the combination. A mouthful of rice, then a mouthful of fish isn’t really the same as eating them together.

Also, the fish you taste in normal sushi tastes the way it does partially from the thickness of cut. An overflowing mouth full of fish is going to be a new experience for sure.

That wobbly cut is burned into my mind and I cannot unsee it. I was a meatcutter from apprentice to journeyman, then not much longer after that. I understand his job is probably a bunch of other things and that my job was just slicing, sawing, etc primal cuts of meat into steaks and chops.
Still, I feel like I shouldn’t be better than him at slicing a (probably) expensive cut of tuna.
I haven’t been a meatcutter in 20 years, but I know without a doubt that I can cut straighter than that.
