Throwback Thursday – (Un)Stuffed Peppers!
Serves 4
Some version of stuffed peppers exists in every culture that grows pepper, but the version most Americans are familiar with is the classic rice and ground beef mixture stuffed into a bell pepper and baked in the oven. The earliest printed version of the recipe goes back to the Boston Cooking-School Cookbook in 1896!
This easy recipe gives you the *flavor* of stuffed peppers with a lot less work!
You will need:
1 package of beef patties
1 bag of frozen pepper stir-fry mix
2 cups of beef broth
1 cup of white rice
1 cup of pasta sauce of choice
1 can of diced tomatoes
Shredded mozzarella cheese
Instructions:
Brown and crumble beef patties, rinse and drain, then fry together with thawed and drained pepper stir-fry. Add 1 cup of white rice and toast for 3 to 5 minutes.
Add 1 cup of beef broth, drained diced tomatoes, and 1 cup of pasta sauce. Stir and bring to a boil, reduce the heat to low, cover, and simmer for 15 to 20 minutes. Turn off the heat and allow to rest undisturbed for 15 to 20 additional minutes. Top with cheese and cover until the cheese has melted.

This week I’m making one pan Dollar Tree dinners. And we’re starting it off with this unsted pepper skillet, which has all the fun of stuffed peppers without ever having to turn on your oven. Heat a large skillet over mediumigh heat and brown your meat. I’m using one package of Dollar Tree beef patties, but you can also use 8 oz of ground beef or 8 oz of sausage. Drain your meat and return it to the skillet with one bag of frozen chopped peppers and onions, which should be thawed and drained. Add one cup of white rice and let this all sauté together for about five minutes until the rice is starting to brown. Then add two cups of beef broth, one can of drained diced tomatoes, and one cup of your favorite pasta sauce. Stir this all to combine. Then bring it up to a boil. Reduce your heat to low. Cover and simmer for 15 minutes. After 15 minutes, turn off your burner and let the pan rest undisturbed for an additional 15 minutes. After that, top it with some shredded cheese of your choice. I’m using mozzarella. And then just cover it up once again and let the residual heat melt the cheese, which should only take about two to three minutes. This dinner is so simple and yet so delicious and can easily be adjusted to suit any dietary needs. It even makes a great meal prep for an easy grab-and-go

Try using a ground turkey,I like to make it a Spanish rice and like to add peppers,onions, black beans,and even corn. And top with salsa or homemade Pico! 😋😋😋

Your lighting is diff on this video. My mom used to cook a stuffed peppers when I was a kids. I prefer the stuffing with out the peppers! 😅
i have made stuffed peppers for 65 yrs, never had cheese on it..but the casserole has been the better option at family get togethers..and of course the cabbage casserole.

Now I have a question, I see bell peppers used so often in recipes, not just yours but other channels as well. I can’t eat peppers, so what would you suggest as a substitute? I mean, they are in everything, frozen meals as well. 😑
I been making this dish for about 2 decades or so it is so yummy. This is the only way I could get my children to eat their veggies I diced them a little smaller. As a matter of fact I’m preparing to make over the wkend. I went shopping the other day just to make this meal. With some garlic butter toast.
It would be easy to add in canned corn or beans, too, if you want extra veg. Looks good, an easy, no fuss one pan dish.
I make cabbage rolls this way sometimes too when i just dont wanna roll n roll n roll. 😂❤

Funny story!! Just placed my Walmart order to include ingredients for stuffed peppers!! My younger son loves them like me but hubby and older son like just the filling!! Looks super yummy! I just recommend your channel to a mom who is on a limited budget. She is holding down her household with two young children while hubby is away getting education/training. I suggested the dollar store meals and 4 meals from a chicken since she openly talks about the assistance she receives including EBT. These videos you make can help moms like her…keep up great work!

When i needed help and did not qualify for assistance because I made $10 too much. These videos helped out alot, and still do. My family is too proud to eat from the dollar tree, but THEY never knew. I would also hit sales from other stores. It has helped me save so money on my grocery bill and can ise that money for other things. I never buy things just because it there and convenient. It usually takes me 2-3 days to buy all my groceries, but i never have to compromise or not get it at all. I absolutely get Everything I need and want without having to spend an arm & leg.Thank You
