    That does not look good to me. It looks very chewy and dense with a lot of holes.

    It looks fine but as some other commenters have posted, it’s underproofed and significantly undersalted. Fortunately these are both relatively easy fixes.

    No it’s not.

    You need enough experience to know how to tighten it, how wet or dry to make the dough and to know how long to let it ferment.

    I know this because I am having a hell of a hard time figuring it out.
