Each portion is 250 cal, 26g protein, and cost about $3.50.
Filling is 12 oz frozen shiitake mushrooms, 12 oz frozen green beans, 13.7 oz gardein "ground be'f", 12 oz heinz onion/thyme gravy, and seasonings (black pepper, thyme, savory, marjoram). Cooled down the mushrooms, everything else basically just added and heated together.
Topping is a cauliflower purée/mash. I steamed 12 oz cauliflower, puréed that, then cooked it down back in the pan with 3 tbsp potato flakes (instant mashed potatoes), 2 tbsp nutritional yeast, and seasonings (dried ramps and white pepper).
Definitely basic in terms of seasoning, and I'll probably end up adding a little fake butter or olive oil when I eat each serving (and lots of fresh black pepper). If I made the same thing again I'd probably make my own sauce/gravy (the heinz is fine but nothing special), add more green veggies, and make a lot more mash (just by adding more potato flakes). But! It's comforting to have ready to eat, high protein, comfortingly bland food around. I feel like a 1950s homemaker.
