
For the gnocchi themselves i cooked 600 grams of sliced pumpkins in the air fryer (170-180 celsius, 30 mins, i suggest you stir them up mid cooking) and then mixed them with 400 grams of flour and some spices (don't mix them too much or the gnocchies will become very hard to chew!)
For the sauce, which is also homemade, i slowly cooked in a pan five tomatoes, one small onion and one big eggplant for like two hours. Always put some water in the pan every 30 minutes, otherwise the sauce will burn. When the eggplant pieces start to melt in the sauce then it's ready!
If you put some olive oil and herbs on the final dish (i recommend origano and rosemary) the flavors will be surely enhanced!
