First time reversed seared with an air fryer. Best steaks I've ever made!

Try this, it totally changed the game for me: cut off a knob of that fat, and put the fat in the hot cast iron till it renders into pure liquid beef fat. Then sear the steaks in that so you use the beef’s own fat (tallow) and it won’t smoke up like olive oil. When you’ve got a beautiful sear then you can add butter if you wish, i usually just put some on top after if I’m in the mood.
Otherwise your interior looks 👌
