Let’s make my easy sheetpan honey mustard chicken thighs with sweet potato and broccoli. It’s the perfect weekn night dinner that’ll be ready in under an hour. I collaborated with Shopright to make this beagle family favorite. So, let me show you how to pull it together. Cut the sweet potatoes into French fry matchixs. In a large bowl, combine the sweet potato fries, broccoli, and whole garlic cloves with a drizzle of olive oil. Season with salt and pepper. Scatter the veggies on a parchment line baking sheet. In the same bowl, whisk the stone ground mustard and honey. Nestle the chicken thighs between the veggies and season with salt and pepper. Brush the glaze over the chicken thighs. It’s okay if some of it runs off because it will make a delicious sauce. Bake at 425 for 30 to 40 minutes until the chicken is nice and golden brown and the veggies are tender. Plate your chicken and be sure to use a large spoon to stir the broccoli and sweet potatoes with the remaining glaze on the sheetpan. It’s so good.
