This is our chickpea and spinach curry. Inspired by the flavors of northern India, brings together two classic ingredients, chickpea and spinach. It’s creamy, nutritious, and you’ll love that you can make it all in one pot in 20 minutes or less. The ultimate weekn night dinner. Start by softening up a chopped onion using your favorite oil. I using extra virgin olive oil. Next, add grated ginger, garlic. It’s already smelling amazing. Now, for the spices, I recommend turmeric, red chili powder, ground coriander, ground cumin, cumin seeds, and fenugreek seeds. Toast the spices until you smell their fragrant aroma. Next, drain and rinse a can of chickpeas. Now, add the chickpeas, some water, crushed tomatoes. Next, add some creamy, unsweetened coconut milk. Stir it all up. Season with salt and let it simmer for 10 minutes so the flavors can come together. After 10 or so minutes, I like to add some brown sugar to give balance to the curry. That’s totally up to you. You do want to add garam masala, which gives a depth of flavor to the curry. Add washed and chopped fresh spinach. Stir the spinach until it wilts and everything is creamy. And there it is. My spinach and chickpea curry inspired by North Indian flavors. Simply serve it with fluffy basmati rice and some plain Greek yogurt for a nice cooling
