Vegan Style Delicious Broccoli & Cheddar style soup that will blow your mind!
[Music] Hey guys, Chef MJ here. Glad to have you guys all with me, friends. So, right now I am making a uh broccoli and cheddar vegan style soup. very similar to Panera’s but much better. The family here loves it. Um, so I got my Vitamix out and I do want to tell everybody a little tip. If you don’t have a Vitamix, not to worry. You could do this in a regular blender and then just pour everything into the stove to get it heated up and thickened. Um, it’s not a big deal there. So, I’m starting with my ingredients. I’m going to start with the almond milk first. And it’s one cup of unsweetened almond milk, just plain. Okay. And then I got my whole uh chopped up red bell pepper and that’s going to go in next. Okay. Uh I did leave the seeds in this. There’s no heat. If you want to take it out, you can deseed it, but it’s not necessary. And then I have a half a cup of unsalted raw cashews. And then a half a cup of raw unsalted almonds as well that we’re going to throw in there. Okay. Then I also have a/4 cup of nutritional yeast. We’re going to throw that in there. Okay. Now, I’m going to go ahead and I got my spices all set on the side. We’re going to add those here in a little bit. Now, I didn’t add the half a block of tofu on camera. Um, but I did go back in and add that later, but you’ll want to go ahead and add that in at this time as well. Okay. So, you’re going to let this just blend up for about 3 or 4 minutes. Okay. In your blender. Okay. And then once you take everything out, uh, it should, if you have a Vitamix, it’s already going to be coming up getting warm and everything else here for you. But, um, if you don’t, not to worry. Like I said, later we could put it in the saucepan. Now, um, since I started eating healthier, I will tell everybody I’ve lost about 37 lbs. Um I was at 237 and now as of yesterday I was like at 189. Um so you know I’ve lost quite a bit of weight just eating healthy and um you know eating more pescatarian and vegetarian. Um still do like my beef and stuff sometimes but um it’s really made a huge difference in the way that I feel. So, um, got the rest of the ingredients added in there and we blend it. We keep blending it uh, for about another 5 minutes until it’s super hot. And I’ve added the steamed broccoli in except for the garnish as well at this point in time. Okay, all your seasonings, everything is blended up in here. Okay, you just pour it into a bowl. Now, I don’t eat cheese, and as you know, there’s actually not any cheese in here because the nutritional yeast and the nuts make up that cheesy flavor, but we do have kids in the house, and they like a little bit of cheese in with it. So, uh I put just a little uh few cubes of cheese in there, but uh it’s really up to a matter of preference. You could do what you want with it. Thanks for watching everybody. I hope you guys enjoy.
