Longtime lurker, first time poster!
I did not grow up eating beans (except hummus) and have been learning to incorporate them into my diet more. I got tired of chickpeas and black beans and decided to branch out, but I couldn't find giant beans so I just made this with canned canellinnis and it's SO good (just rinse the cannelinnis before you throw them in the pan).
This recipe is perfect exactly as is. It takes fifteen minutes to make, tops, including chopping, and I eat it with a piece of toasted gluten free sourdough bread, and some cut up veggies or salad if I'm not feeling too lazy. I could (and probably will) eat this every single week.
