**Ingredients:**
– A few tablespoons of red split lentils
– 1 liter of vegetable stock
– 1 tablespoon of vegetable oil
– 1 chopped onion
– 2 cloves of garlic, minced
– 1 teaspoon of homemade chilli flakes in oil
– 1 carrot, peeled and diced
– 6 small potatoes, diced
– 2 teaspoons of ground Svaneti salt (optional)
– 2 teaspoons of ground cumin
– 2 teaspoons of pilaf spice mix (optional)
– 1 can of tomatoes
– Salt (to taste)
**Instructions:**
1. **Sauté the Vegetables:** In a cast iron pot, heat some oil. Sauté the onions for 5 minutes.
2. **Add Spices:** Add the spices, garlic, carrot, and potatoes. Mix well and let it cook for a couple of minutes.
3. **Incorporate Tomatoes:** Add the tomatoes and cook for an additional few minutes.
4. **Add Broth:** Pour in the stock and cover the pot. Allow the potatoes to cook fully.
5. **Add Lentils:** Once the potatoes are tender, add the lentils and cook for another 10-15 minutes.
6. **Set Aside to Rest:** Remove from heat and let it sit for about 15-20 minutes before serving. The texture will thicken as it rests.
Meanwhile, a lentil soup is resting. Prepare the cabbage slaw.
**Ingredients:**
– 300 g white cabbage, coarsely shredded
– 300 g red cabbage, coarsely shredded
– 150 g carrots, grated
– 2 large onions, thinly sliced
– Chopped fresh parsley and dill (to taste)
– Juice of one lemon
– 2 tsp salt
– Oil of your choice
– Roasted peanuts (about 100 g or to taste)
**Instructions:**
1. In a large bowl, mix the shredded white cabbage, red cabbage, grated carrots, thinly sliced onions, and chopped herbs.
2. Add the roasted peanuts.
3. Pour in the lemon juice, salt, and oil.
4. Mix everything well to combine, and enjoy!
