This is a heartbreaker. We should call you Malafina. Just like you. Ingredients. Today I’m making another one. Iconic panino. This time we are going to dedicate this panino to Nona Katarina. Okay. Why? Because this panino is extra special just like you. Why is it extra special though? Because it is an assembly, an ensemble of parigana style eggplants in a panino with layers upon layers of beautiful cheeses, basil, an egg, and a touchs of powerful Calabrian chili peppers. This is something you’ve never eaten before. I’m creating it with you today. There might be steps there I’m changing along the way. But that’s how Italian cooking is is sentimental. It’s emotional. It’s reactionary just like me. [Music] Malafina. So today we’re making the malafina panino. What does malafina mean? What does malafina mean? Who is the malafamina? Some people wanted to say that she is a cruel woman. She’s a stereotype, a woman that makes you suffer. Now, what are we going to do today to translate this personality, but add a little sprinkle of drama and sus and also positive excitement. We’re creating a panino that is fire, that is incredible, that has got layers of personality and topped it off with spiciness of the Calabrian chilies. It embodies the Mala feminina. So, she’s a woman that makes you cry. We’re gonna add crying because of the Carabian’s chili peppers. Now, for this, we’re going to salt and let them rest about 30 to 40 minutes. So, do your makeup, uh, call your loved ones, uh, whoever you want. We’re going to salt this and let it rest. So it weeps like the manafina that makes others weeps whips others weep malafina. I’ve washed them now. Pat them dry. Now the salt helps make them softer when they fry. It breaks down the inner fiber of the eggplant. Perfect. Now my favorite avocado oil. We’re going to brown them lightly and then we’ll toss them in a tomato sauce. You do not want to overb burn the eggplants. Okay. Now I’m going to make a 10minut tomato sauce. Now this is very important. This tomato sauce is going to do two things. One, drench the eggplant coins. Large coins is an extra large coin. is a reward in a form of a fried eggplant that’s going to be drenched in tomato sauce. And then with the tomato sauce, we do one more extra thing. And now the basada of nabolan tomatoes. [Applause] salted. This sauce has to bubble on a medium flame. We want a specific flavor and it can only happen if it’s cooked on a medium flame as opposed to a low seam. After a few minutes of cooking, garlic goes out. It’s been bubbling for 5 minutes. We add the eggplant. We’re going to break mozzarella by hand directly into the sauce. Now remember, these are contents, the ingredients of your panino. So you want the mozzarellas to be broken up into large chunks and toss them in. It’s going to take about 2 minutes. Calabrian chili pepper paste. We’re going to dilute it with extra virgin olive oil. This is going to make it a malafina. Now let’s cut the bread. Guess what we’re doing now? We’re using the remaining of the sauce with the mozzarella, little bits of eggplant that have melted in it. We’re going to smack an egg into it. And now the final touch. Calabrian chili pepper oil on top of the egg. Just gorgeous. Nana would be proud to fe this mala feminina panino is my iconic one of the iconic panini in the panini cities. It’s like a you know several courses meal into one but it’s so special. It’s unique. It’s irresistible. It’s so voluopuous. It’s so irreplaceable. It’s so just like a passionate woman who’s a heartbreaker. This is my malafi panino. Stay tuned because we’re not stopping here.
