Howdy y’all. Today we’re visiting Texas and making my version of Texas cowboy chili. This hearty chili brings the best of both worlds with tender chunks of stewy and flavorful ground beef simmer together. Green Anaheim peppers add a smoky kick while a mix of kidney beans and black beans give it that cowboy campfire heartiness. Toss in some fire roasted tomatoes and a bold chili seasoning blend and you’ve got a rich slow simmered pot of Texas style comfort food that’ll warm you right down to your boots. Top it off with some sour cream, cheese, and green onions. Ooh, woo woo woo. Now that’s some yummy chili. This blends perfectly with my green chili cheese cornbread. Cowboy approved. Now enjoy.   1. 🍲 Texas Cowboy Chili Recipe 🍲

    Ingredients:
    • 1 lb ground beef
    • 1 lb beef stew meat (chunks)
    • 5 garlic cloves, minced
    • 1 onion, diced
    • 1 bell pepper, diced
    • 3 roasted Anaheim peppers (peeled & chopped) OR 2 cans diced green chilis (4 oz each)
    • 2 cans fire roasted tomatoes (14.5 oz each)
    • ¼ cup chili seasoning mix (see below)
    • 2 tbsp beef bouillon (powder or paste)
    • 2 bay leaves
    • 1 can kidney beans, drained & rinsed
    • 1 can black beans, drained & rinsed
    • 2–3 cups water or beef broth (adjust for thickness)

    Chili Seasoning Mix (¼ cup):
    • 2 tbsp chili powder
    • 1 tbsp garlic powder
    • 1 tbsp onion powder
    • 2 tsp smoked paprika
    • 1 tsp cumin
    • 1 tsp black pepper
    • 2 tsp salt

    Instructions:

    Heat 2 tbsp oil in a Dutch oven over medium-high. Brown stew meat & ground beef, drain excess fat.

    Add onion, bell pepper, garlic & peppers. Cook 10 mins until softened.

    Stir back in browned meat.

    Add fire roasted tomatoes, beans, bay leaves, and enough broth/water to cover.

    Bring to boil → reduce heat → simmer 1.5–2 hrs until meat is tender & chili thickens. Add liquid if needed.

    Remove bay leaves, adjust seasoning, and serve hot topped with sour cream, shredded cheese & green onions.
