Ingredients:
For the Koftes:
800g ground beef
1 large onion
2 slices bread (soaked in water or milk)
1 egg
Salt, black pepper, chili flakes, red pepper, cumin (to taste)
Handful chopped parsley
Vegetables:
2 eggplants
2–3 peppers
2-3 potatoes
Tomato Sauce:
400g tomato purée
1 tbsp tomato & pepper paste mix
4 garlic cloves (minced)
½ glass water
1 tsp oregano
Blend onion in a food processor. Soak and squeeze the bread. Mix ground beef, onion, soaked bread, egg, parsley, and spices. Let rest in fridge. Slice eggplants and peppers into even sizes. In a bowl, mix all sauce ingredients together. Shape the meat mixture into round koftas. In an oven tray, arrange shaped koftes and vegetables. Pour the sauce over everything. Cover with baking paper. Bake at 200°C (392°F) for 1 hour 30 mins, uncover halfway for browning. Serve warm with a side of yogurt.
