Most anything but American is good as far as I’m concerned for grilled cheese. I like extra sharp cheddar particularly well. I also really love dill Havarti. Using sourdough bread is always nice as well.
What type of cheese did you use here? It looks as if it’s a lighter coloured cheese from what I can tell.
