Tomatoes stuffed with creamy orzo pasta, peas and bacon!

If you don’t love foods that are stuffed with other foods, then this recipe isn’t for you. Everyone else, listen up. These delicious and adorable little orzo stuffed tomatoes have been living on my blog since 2017. And honestly, I kind of forgot they were there. When I first made them, I think I was going for a spin on a BLT and called them BLP tomatoes, but they never contain the L and I didn’t refer to the T. So, heaven knows what I was actually thinking. But what they do contain is a creamy, zesty orzo pasta tossed with peas and crispy bacon. And then, in my opinion, what makes them super fun, the pasta salad is stuffed into a juicy tomato because, well, why not? These would be so good for a spring or Easter brunch.
