My potato salad recipe is a great one for when you want a little impressive salad dish but still quick to fix. have a taste for asparagus and find a great companion to potatoes.
24 oz small red potatoes (quartered)
4 oz asparagus
3 garlic cloves (minced)
1 tbs butter
Salt to taste
DRESSING:
1/2 medium red onion ( chopped )
3 tbs balsamic vinegar
3 tbs olive oil
1 tbs minced fresh parsley
1 1/2 tbs Dijon mustard
1,2 tsp pepper
Lettuce leaves (optional)
Directions:
1. In a saucepan, cook potatoes in boiling water, add salt and let it cook for 12 minutes.
2. In a small skillet, saute asparagus, with butter, add chopped garlic and let it simmer for about 5-8 minutes.
3. In a round bowl, combine the oil, vinegar, red onion, parsley, pepper, mustard
4. Drain vegetables, add dressing, and toss to coat. You can serve salad in a lettuce lined oval plate
