Here’s what I meal prepped for my husband and I this week:
Chicken Souvlaki Pitas
20 oz chicken breast, sliced then marinated
2 zucchinis
1 bell pepper (or 1/2 of 2 different colors)
Pita bread (store bought, not pictured)
Tzatziki sauce (store bought, not pictured)
Marinade: 1/4 c Olive oil, 1/8 c lemon juice, 1 tsp salt, 1 tsp pepper, 1 tsp oregano, 3 garlic cloves (minced), 1 tbsp Greek yogurt (optional for creaminess, I didn’t have any this time)
Here’s how I made mine: I started by slicing and marinating my chicken. You can marinate overnight, but I marinated mine for 2 hours in the fridge. Slice zucchini & bell pepper(s). I cooked everything on my George Foreman countertop grill, starting with the zucchini. Lightly spray the grill with olive oil, season veggies with salt and pepper. Grill until desired doneness. Next, remove the chicken from marinade and grill that as well, I had to do it in 3 batches but it only took a few minutes per batch. We bought pita bread and tzatziki sauce so we can heat it up, assemble the wraps, and enjoy!
Red Curry Chicken
1 cup Jasmine rice (or 2 microwave rice packs)
20 oz chicken tenderloins, cut into bite-size pieces
1/2 yellow onion, diced
2 cloves garlic, minced
2 bell peppers, sliced
1 can coconut milk
2 tbsp red curry paste
2 tbsp brown sugar
2 tbsp fish sauce (I had to sub with soy sauce today)
1 tbsp lime juice
1 tbsp olive oil
Here’s how I made mine: Start by cooking your rice, or do it at the end if you use the microwave kind like I did this time. I cut up my chicken, bell peppers, onions, and garlic. I started by heating the olive oil over medium heat and sautéing my diced onion, then added the minced garlic towards the end. Then I poured in my coconut milk, curry paste, brown sugar, and fish sauce. Once that was combined, I added in my chicken. The goal is to slowly cook the chicken in the sauce so it comes out tender, so try not to let it boil. Lower the heat if needed. Towards the end of the chicken cooking I added my bell peppers and let them cook for a few minutes (we don’t like them too mushy). I finished my curry with the lime juice and assembled the meal prep containers, adding a dash of dried parsley on top for some green. Enjoy!
Copycat Chick-Fil-A Nuggets w/ Potato Wedges
20 oz chicken tenderloins, cut into nugget-size pieces, marinated
1 lb baby yellow potatoes
Marinade: 1 cup pickle juice, 1/2 cup milk, 1 egg
Coating: 1 cup flour, 2 tbsp powdered sugar, 1 tsp paprika, 1 tsp salt, 1/2 tsp pepper, 1/2 tsp garlic powder
Potato seasoning: Salt, pepper, garlic powder, paprika, Italian seasoning

Here’s how I made them: I started by cutting my chicken & potatoes. I made everything in the air fryer so it all had to be cooked in batches while I prepped the other meals. I marinated my chicken in the fridge for about an hour, but wouldn’t do much longer than 2 or 3 hours. Combine the flour & seasonings to make the chicken coating. Drain the marinade from the chicken but don’t dry them off, immediately coat them in the mixture, spray them with oil, and air fry at 375°f for 8-12 minutes, flipping them halfway through. Repeat for each batch if your air fryer is small like mine. Cut the potatoes into wedges, place them in the air fryer with the cut side up, spray with olive oil and season with listed seasonings above. Air fry at 375°f for 12-14 minutes, shaking towards the end so the skin side can get crisp. I threw in the sauces, and honestly think it’s much needed because the nuggets themselves didn’t have a ton of flavor. Anyways, I can’t wait to eat these and am crossing my fingers that they reheat well. Enjoy!

This was such a fun meal prep lineup to make! I’m not sure what time it is for everyone reading this, but I work nights and decided to meal prep overnight on my day off so that’s why I’m posting at 3am (my time) lol! Looks fantastic! Saved your post. When I saw the nuggs, my first thought was … I wonder if I can make those in the airfryer. And look! That’s exactly what you did! Thanks for sharing. I’ve thought about doing a curry with rice beside it just like you have. I like my curries pretty saucy though, and wondered if the sauce would just run into the rice as it sat. Looks like your curry is a little thicker?
