Hi there. Welcome back to my kitchen. I am so excited to share with you my vibrant, hearty, and comforting couscous salad. This salad is full of warm roasted vegetables and seeds, fluffy couscous, and a burst of seasonal flavors that make it so satisfying and nourishing for the winter season. So, you can cook your couscous according to your package instructions or you can just scroll back to my other videos and check out how I’ve made uh couscous before. There is a video up there that you can have a look at. And to that couscous, I added some roasted uh sweet potatoes, baby spinach. I also added some some baby rocket. And I also added some roasted pumpkin seeds and walnuts, some cranberries, some feta cheese, and some crispy onions. And then I set that aside. Look how cute that is. So nourishing and filling. So now um I made the marinade for the salad using olive oil, balsamic vinegar, red wine vinegar, salt, pepper, mustard, and some maple syrup. You can use honey as well instead of maple syrup. And once you have all of this in the bottle, just shake it up. And there you have your salad dressing. And before you dress your salad, you have to mix up all the ingredients that you have in your bowl pro first before you dress it. And once it’s all mixed up, you can dress your salad and enjoy.
