It's a lot harder to meal prep when I'm having to depend on the food bank because I get the most random assortment of things sometimes and I eat a mishmash of items. This week things lined up.

Entree: onions, peppers, and carrots sauteed, added a can of tomato sauce, a can of beans, a can of corn, and some shredded zucchini. Added a bag of mystery meat, I mean fully cooked pulled pork and a bottle of taco sauce. Cook till everything is well combined.

Rice: I added a handful of lentils to this – it boosts the protein and uses up some of the bags upon bags of lentils the food bank keeps giving me. A squeeze of lemon added to the rice.

Veggies: green beans sauteed in chopped garlic and some onion powder, and the rest of the juice of the lemon. The plate is topped with a bit of quick pickled red onion, quick pickled carrots, and a teaspoon of so of cojita cheese.

    Impressive what you did with the randomness! Sometimes when I make donations to food bank collection sites, I try to put in complementary items, like pasta and sauce or beans and tortillas. I like to add spiffy things too, like quinoa or falafel mix for my fellow vegetarians.  I hope your food bank stays well stocked and provides what you need!

    This looks really good! I like to do this too, but with food we already have in the pantry. Sometimes when I get overwhelmed by the cost of life, I’ll take a long break from grocery shopping and force myself to get creative. And I always feel like I have the most random assortment of things that end up not getting eaten in my pantry (sometimes my deep freezer too). I LOVE when I can actually make a beautiful meal come together with whatever I can find!
