π Recipe Mediterranean High Protein Salad π₯
ππ₯ Ingredients
Salad Base:
πΉ1 large head romaine lettuce, chopped
πΉ1Β½ cups cherry tomatoes
πΉ1 cup cucumber, diced
πΉ1 red onion, thinly sliced
πΉhandful olives, pitted and halved
πΉ1 can chickpeas (15 oz / 400 g), drained & rinsed
πΉ4 oz (115 g) feta cheese, crumbled
πΉ4 boiled eggs
Dressing:
πΉ60 ml (ΒΌ cup) extra virgin olive oil
πΉ45 ml (3 tbsp) lemon juice
πΉ1 tsp lemon zest
πΉ1 tsp dried oregano
πΉ2 tsp Dijon mustard
πΉ2 tsp honey
πΉ1 tsp salt + black pepper to taste
How to make it:
Boil the eggs: Cook 4 eggs for 8 minutes, cool under cold water, peel & cut.
Dressing: Whisk together olive oil, lemon juice, zest, oregano, Dijon, honey, salt & pepper.
Marinate chickpeas: Toss chickpeas in the dressing and let sit while prepping veggies.
Assemble: Add romaine, tomatoes, cucumber, onion, olives, feta, marinated chickpeas & eggs.
Serve & enjoy: Toss just before serving so everything stays fresh, vibrant & coated.
