Salad Base:
πŸ”Ή1 large head romaine lettuce, chopped
πŸ”Ή1Β½ cups cherry tomatoes
πŸ”Ή1 cup cucumber, diced
πŸ”Ή1 red onion, thinly sliced
πŸ”Ήhandful olives, pitted and halved
πŸ”Ή1 can chickpeas (15 oz / 400 g), drained & rinsed
πŸ”Ή4 oz (115 g) feta cheese, crumbled
πŸ”Ή4 boiled eggs
Dressing:
πŸ”Ή60 ml (ΒΌ cup) extra virgin olive oil
πŸ”Ή45 ml (3 tbsp) lemon juice
πŸ”Ή1 tsp lemon zest
πŸ”Ή1 tsp dried oregano
πŸ”Ή2 tsp Dijon mustard
πŸ”Ή2 tsp honey
πŸ”Ή1 tsp salt + black pepper to taste

How to make it:
Boil the eggs: Cook 4 eggs for 8 minutes, cool under cold water, peel & cut.
Dressing: Whisk together olive oil, lemon juice, zest, oregano, Dijon, honey, salt & pepper.
Marinate chickpeas: Toss chickpeas in the dressing and let sit while prepping veggies.
Assemble: Add romaine, tomatoes, cucumber, onion, olives, feta, marinated chickpeas & eggs.
Serve & enjoy: Toss just before serving so everything stays fresh, vibrant & coated.
