Here is my go-to Mediterranean quinoa salad made using Pinto’s organic quinoa which is high in minerals, gluten-free and absolutely cholesterol-free. All you have to do is wash and soak the quinoa for 30 minutes. Then boil it with water and salt until fluffy. Now in a bowl add boiled quinoa, all the vegetables mentioned, roasted paneer for protein. Now for the dressing, add olive oil, lemon juice, honey, chopped garlic, salt and pepper. Pour this dressing on the salad. Add fresh coriander. Give it a good toss. Protein packed colorful bowl is ready.
