This creamy chicken broccoli rice casserole is straight out of the 70s. Warm, cheesy, and comforting. Let’s go. Two cups of fresh broccoli fuettes. Then I like to cut them up into bite-sized pieces like that. Two chicken breasts cut up into bite-sized pieces like that. You need two tablespoons of butter or margarine and melt them in a big pot. Add salt and pepper, onion powder, garlic powder. Add the chicken. I forgot to add the oregano. When the chicken’s done, take it out and put it into a bowl. To your pot, add 1 tablespoon of olive oil, 2 and 1/2 cups of chicken broth, 1 and 1/4 cups of long grain white rice. Bring that to a boil. Once it starts boiling, turn it down to low. Cover it for 6 minutes. After the 6 minutes is up, remove the lid. Add your broccoli, but do not stir. Put the lid back on and cook for another 10 minutes. After 10 minutes, check to see that all the broth has been absorbed, and it is. Put the lid back on it, remove it from the heat, and let it sit for 10 more minutes. After 10 minutes, add one can of cream of mushroom soup or cream of chicken soup. Add a half a cup of whole milk. Add a half a cup of sour cream. Stir it all up. Add in the chicken. The recipe says two cups of cheese. I’m just going to put in a handful. Stir that up. Pour all of that into a greased 9×13 pan. Add more cheese to the top like that. Cover it with aluminum foil. Bake it in a 350° Fahrenheit oven for 15 minutes. It just came out of the oven. I don’t know. I think I’m going to put it back in there without the aluminum foil on cuz I think that needs to be a little bit browner. Okay, ignore my dogs. I just took it out from under the broiler. I had it on the broiler on high for seven minutes and this smells so good. Oh my goodness. Look at that. It’s definitely comfort food. Very good. Make that.

    • 2 tbsp butter (28 g)
    • 2 chicken breasts, cut into bite-sized pieces (about 350–400 g)
    • 2-1/2 cups chicken broth (590 mL)
    • 1 tbsp olive oil (15 mL)
    • 1-1/4 cups long grain white rice (250 g)
    • 2 cups fresh broccoli, chopped up (150–175 g)
    • 1 can (10.5 oz) cream of mushroom or cream of chicken soup (295 g)
    • 1/2 cup whole milk (120 mL)
    • 1/2 cup sour cream (120 g)
    • 2 cups shredded cheese (about 200 g)
    • Salt, pepper, garlic powder, onion powder, oregano — to taste

    How to make it:
    1. Preheat your oven to 350°F (175°C).
    2. Melt the butter in a big pot and toss in the chicken. Season it and cook till done. Scoop it into a bowl.
    3. In the same pot, add the broth, oil, and rice. Bring it to a boil.
    4. Once it’s boiling, cover it, turn the heat down low, and let it simmer for 6 minutes.
    5. Take the lid off and toss the broccoli right on top — don’t stir it in.
    6. Cover it back up and cook another 10 minutes.
    7. Check to see if the liquid’s absorbed. If not, give it another 5 minutes.
    8. Remove from the heat and let it sit (still covered) for 10 minutes.
    9. Stir in the soup, whole milk, sour cream, chicken, and half the cheese. Mix it all together.
    10. Pour it into a greased 9×13 inch (33×23 cm) pan. Top with the rest of the cheese and cover with foil.
    11. Bake for 15 minutes, then remove the foil and bake another 10 minutes.

    I wanted the cheese to be more crusty and bubbly, so I put it under the broiler for 7 minutes after it finished baking.

  3. Don’t like using canned soup due to the higher sodium content. Would use sour cream or yogurt instead.

  4. Through it all in a Crock pot and enjoy the aroma. Toss in a pan to brown the cheese. Knee injury, can't stand long. Yummy!!❤❤

  5. I used to cook for chicken with broccoli and add cream of chicken and onion seasoning pkg in skillet. Also, add chicken broth delish! I don’t add sour cream or cheese.

  7. Doesnt look very nice. Also you used Kroger shredded cheese. The reason it didnt melt properly is because its not real cheese. Most cheeses sold are plastic cheese.

  8. Just a tip:

    Leaving the lid ajar when cooking or steaming broccoli to prevents naturally occurring acids from becoming trapped in the pot & keeps the broccoli nice and green! Otherwise the bright green color can dulls to an olive-green or grayish color.

  9. Kroger cheese, Kroger chicken broth are the worst tasting things in the entire food industry. Kroger cheese is flavorless.
