When you talk to folks about barbecue you’ll normally find that most people fall into two categories.
Those that appreciate the original meat market experience with the smoke stained walls and the initials carved into the wood etc, and those that love the boutique, new school approach.
High quality ingredients that come with a higher price tag.
Wholy bagel is the Lockhart bbq experience.
Perhaps this is as close to the authentic flavor profile you’re gonna get whereas a place like David Doughies is the La Barbecue of bagels.
Wholy bagel had a steady stream of customers the looked like they all just came off of the subway station to get their fix.
The bagel itself was served sandwich style. Plain bagel, plain cream cheese, and included capers, onions, tomato’s, and nova lox for $13.40.
The flavor of everything inside was probably my favorite so far. Not sure why it tasted better, but it was all nicely portioned out. Not too much onion for example like I had at Casper.
The bagel itself had a nice shine, and was the densest bagel consistency I’ve had so far. Felt more “bready”. Great chew, and like a perfectly cooked rib, perfect bite through. I picked up a little salty flavor from the bagel itself, but it was toasted and yummy.
Like a Lockhart bbq joint, the place itself could use a once over, but maybe that adds to the charm?
I think if I could take the inner toppings of this with the Doughies bagel itself would be the perfect meal. Onward!

I don’t really get the bbq comparison but I do love Wholy Bagel they make ordering ahead pretty simple, also like Doughies. Glad they’re both about equidistant to me.

I love these bagel reviews but can’t swing that much for a bagel. So I looked at options I could afford and found Einsteins has a back to school special if you sign up for rewards. 13 bagels and 2 containers of schmear for 10 bucks. Definitely not fancy like these but works if these post made you crave a bagel.
Nice review op. Theres definitely a balance to making the perfect sandwich or in this case bagel. I really like both Casper and David doughies but haven’t tried wholy bagel, will have to try next costco run

Ex New Yorker now west coaster coming to Austin next week and you have my attention. Always on hunt for legit bagels. But 9 times out of 10 they turn out to be trash.
A cabbie in New Orleans taking me to the airport once saw that I had a box of beignet mix from Café du Monde. And he said “good luck making those at home because the key is Louisiana water.”
I get the feeling the same holds true for bagels
This is my absolute favorite place for bagels.
Knew the original owner who opened it up. Scott. He would refute yelp reviews with “ don’t come back “. He was a real one.

Donuts > bagels
It’s really good, I find it a bit expensive for what it is though.
