When tomatoes are perfectly ripe, they need nothing more than salt and some really good olive oil to make them amazing. But when I find that they’re slightly lacking, which I’m sadly finding more and more in the UK now, I merate them in basil, red onion, garlic, red wine vinegar, and extra virgin olive oil, which is still simple, but it injects that little bit of energy they need back into them. Make sure you serve them at room temperature, too. The tomatoes will thank you for it. It’s the best tomato salad.
