Hi there!

I’m getting LASIK tomorrow and my doctor recommended I eat healthy foods like chicken and salmon. So this week’s meal prep is inspired by 2 dishes I really like from local restaurants.

* Inspired by Fire On The Mountain’s Mandarin Salad (I love getting it with chicken tenders but doc said to limit the fried/processed foods so I did pan fried😫)

They both turned out so good! I might make the Asian Chopped Salad for my sister’s baby shower potluck. The dressing is so 🤤
