Pork chops are the most underrated meat option, but this bourbon peach glaze makes this a top tier option for dinner. And it doesn’t hurt to get a little sip of the juice while you’re cooking. You really can’t beat a recipe that uses fresh inseason produce. You want to find really soft and ripe peaches. We’re going to sauté some garlic and butter. And then toss the peaches in the butter with the bourbon, ketchup, mustard, worasher, honey, brown sugar. And then we’re going to combine all that and cook it for about 20 minutes adding a little bit of water. Let it simmer. Let it get really thick. While it’s cooking, we’re going to prep these pork chops just with salt and pepper. Once the peaches are done simmering, I take them into a bowl or a cup and I use my immersion blender to blend it completely into a sauce. Once that’s blended, I heat a cast iron to medium heat and I sear the pork chops on both sides. Once I flip the pork chops the first time, I start painting that bourbon peach barbecue sauce on them. Then I flip them about every minute and I continue to paint them with that sauce until they’re about 145°. I save a little extra sauce separately to put on at the end. These are the most tender pork chops. They’re so delicious.
