👉INGREDIENTS:
3 cups of red lentils,cooked
2 Persian cucumbers,sliced
1/2 cup red onion sliced
1/2 cup cherry tomatoes,sliced
4 mini peppers,chopped
1/2 cup fresh parsley chopped
Juice of 1/2 lemon
1/2 cup feta cheese
1/2 cup sliced olives
👉Dressing:
1 tsp yellow mustard
2 tbsp apple cider vinegar
4 tbs olive oil
1 tsp salt
1/2 tsp pepper
1 tsp oregano
1 tsp garlic powder
1/2 tsp turmeric

Rince and soak lentils for 2 hours.
Simmer the lentils on low heat for 5 minutes,stirring occasionally.
Drain and set aside to cool.
Add dressing to a large bowl.
Add lentils and marinate for 10 minutes.
Add the veggies.
Toss everything together.
Top with feta,olives and parsley.
Enjoy!
Refrigerate leftovers for up to 4 days.
