Tostadas de Frijoles Fritos 🫘
A perfect quick lunch idea. These black bean tostadas are simple to make and full of comforting, familiar flavours. I used shop-bought tostadas this time, but you can always fry or bake an old tortilla until it’s crisp. The black beans are fried in some bacon lard I had in the fridge, which adds a deep, smoky richness. I topped them with shredded lettuce, crumbled queso and a spicy salsa. Easy to throw together, and just right for when I want something delicious, but I’m short on time.
Recipe
Black Bean Tostadas
Makes 8
Ingredients
8 tostadas (shop-bought, or made by frying or baking old corn tortillas)
2 cups cooked black beans
2 tablespoons bacon lard (or any fat you prefer)
Salt, to taste
2 cups shredded lettuce
½ cup crumbled queso fresco, cotija or any mild cheese you have
Spicy salsa, to taste
Method
Heat the bacon lard in a frying pan over medium heat. Add the black beans and a pinch of salt.
Mash until smooth and fry until the mixture thickens and becomes rich and flavourful, about 5 minutes.
Spread a generous spoonful of the hot beans onto each tostada.
Top with shredded lettuce, crumbled cheese and your favourite spicy salsa.
Serve straight away, while everything is crisp and fresh.

Today I made some super quick black bean tostadas which are the perfect lunch idea. I used storebought tostadas, but you can always fry or bake a stale tortilla until crisp. Then spread on some fried black beans. I made mine with a little bacon lard I keep in the fridge. Top with shredded lettuce, a sprinkle of queso, and finish with a spicy salsa. And that is it.
