I love this pumpkin curry so much! It’s super creamy and satisfying with warm Jasmine rice.
I highly recommend using chestnut pumpkin, which you can often find in Asian grocery stores. The trick is to steam the pumpkin first, and then add them to cook with other vegetables. My husband likes this curry a lot. I hope you will enjoy it as well. 🎃🍂
