Chop leeks into disks, and put them into a large baking tray with Olive Oil, Balsamic, and Thyme.
Blend Tofu, Sundried Tomatoes, Salt, Pepper.
Spread the mixture onto a store bought rollout pastry, then put ontop of the leeks paste side down.
Bake for 20 – 30 mins

    Where does the sand go? In my mouth? I love leeks, but I do call them sand onions because they’re 2% sand. I bet it tastes delicious. I’d probably wash and dry them first, even if won’t look as pretty.

    Also, what kind of tofu? Silken, I’m guessing.
