

Literally just saw a post about this last week. I’ve been using this pan for probably a month and a half now and it randomly did this to my most recent batch.
Anyone have a good recommendation on where I can get one that won’t poison me? 😂

Never buy from a six-random-letters manufacturer
I only have experience using dutch ovens or baking steels, but everyone seems to recommend either a cloth couche or emily’s ceramic baguette baker($200 USD).
I bought the Chicago Metallic Commercial II (off amazon) and it’s been great. It conducts heat really well too.
If you have a resturant supply company nearby, they sell the mesh silicone versions of these that places like Subway use. They are dirt cheap and work perfectly.
Buy the stainless steel uncoated version with perforations. Make sure that it has no coatings of any kind. I use mine all the time and then put it in my dishwasher for cleaning. You need to liberally grease the pans before baking, but nothing sticks after that.
SAME! I had to scrape what I can from the bottom…I didn’t want to throw out the pan so I put parchment paper underneath.
Use a stone you’ll get better results and it’s safer

I would say don’t trust any random Chinese company on Amazon or any other site. While bezos is an absolute piece of shit, the actual Amazon products are usually at least acceptable if not decent equivalents of any given budget item (their dutch oven for example I think compares well with lodge). Buying really anything that is a random series of capital letters usually means you’re buying absolute garbage Chinese knockoff products and I wouldn’t trust a materials report in the description.
If you haven’t learned this before now definitely apply it to all other products you buy on Amazon… Lots of chemicals and residues might be in any of those things

Parchment paper is your best friend. Also, someone said —*perhaps in the same post you’re referring to*— that they bought some used baking pans/trays off Ebay from a bakery. I think that’s a brilliant solution. You know they’re up to the task, they’re well-seasoned if they needs seasoning and any issues you’d have with new trays have long been baked out of them.

I’m surprised no one has mentioned Matfer Bourgeat baguette pans. They are more expensive, but it’s a reputable company.
What temperature do you bake your baguettes at? I have 2 similar ones and bake at 464F (per the recipe I have) which is beyond the recommended temp. I have had that issue and am using parchment paper now… I’m sure the heat would be better distributed directly on the perforated support.
I saw some recommendations in this thread about using a stone for baking, now I’m curious. Short of having an actual bread oven…
