Steamed chicken with scallion is a traditional Vietnamese dish, loved for its simplicity 
in preparation but still retains the natural sweetness of the chicken. The characteristic 
strong aroma of scallion when steamed with chicken will create a light, not greasy dish, 
very suitable for family gatherings. This dish is not only delicious but also nutritious and 
very easy to make. Recipe. Ingredients.Chicken: 1/2 of a free-range chicken (about 1.5 – 2 lbs 
/ 0.8 – 1 kg) or 2-3 chicken thighs. Scallions: 200g (choose fresh, thick stalks).Seasoning: 1 
tsp salt, 1/2 tsp MSG (optional), 1/2 tsp ground black pepper.For the dipping sauce: Salt, pepper, 
lime, fresh chili.InstructionsPrepare the chicken: Clean the chicken, rub it with coarse salt and 
ginger to remove any odor, then rinse with cold water and pat dry. Prepare the scallions: Wash the 
scallions and remove the roots. Separate the white parts from the green parts. Bruise the white parts 
and cut the green parts into 2-inch segments. Marinate the chicken: Rub the chicken with 1 tsp 
salt, 1/2 tsp MSG, and 1/2 tsp black pepper. Let it marinate for about 15 minutes to absorb the 
flavors. Steam the chicken: In a steamer pot, place the bruised white parts of the scallions on 
the bottom. Arrange the marinated chicken on top, then cover the chicken with the green scallion 
segments. Cook: Steam the chicken for about 20-25 minutes. To check for doneness, pierce the chicken 
with a skewer; if the juices run clear, it’s ready. Make the dipping sauce: In a small bowl, 
combine 1 tsp salt, 1/2 tsp pepper, and squeeze in the juice of a lime. Add sliced fresh chili 
(optional) and stir well. Serving & Presentation. Once the chicken is cooked, transfer it to a plate 
and garnish with the steamed scallions. The dish is best served hot, accompanied by the salt, 
pepper, and lime dipping sauce.Important Tips: Choosing chicken: Opt for a fresh, free-range 
chicken for firm and flavorful meat; Scallions: Using fresh, thick scallions will give the dish 
a more robust and fragrant aroma; Steaming: Ensure there is enough water in the steamer
