Had a fantastic meal at Huso the other night. People seem down on the restaurant in general, but after two weeks in Amsterdam, Berlin and NYC, this was the clear standout meal, including a meal the day before at The Modern.

Highlights were the tuna in a nori shell with black garlic sauce and caviar, the eggs royale with hot smoked salmon and hollandaise (pretty much the best Benedict I’ve ever had), the squab with corn and grits, the wagyu, and the peach, raspberry and white chocolate dessert.

They were a bit pushy about drinks and the caviar pairing up front; nothing insane but slightly uncomfortable. After we declined their offerings they left us alone and the service was excellent. The kitchen tour was great and we got to see the private room and the wine cellar too.

I will say that the caviar pairing seems silly; the table next to us got it and it’s just a lump of caviar on all the dishes that didn’t already have it. It would seem to me that if the caviar was necessary, they would put it into the meal and the price. About a third of the dishes already have caviar.

Overall a great experience. I expect some awards are coming soon for Huso.

    Who is down on Huso lol? Everyone has been raving about this place . I loved it too . Didn’t find them pushy at all – and the prices even for those add ons were relatively inexpensive 🙂 glad you enjoyed!

    100% agree wrt add-ons. This is a cancer in the industry. Just fucking put it in the dish if the thing belongs to fulfill your vision and price accordingly. No one is dining at these places because of their value pricing.
