    Beautiful! Out of curiosity, is it ok to ferment it in a transparent jar? Felt wrong, due to light intrusion.

    There is nothing better than homemade kimchee. I tend to make my own ‘super spicy’.

  5. That jar looks like it could start a tiny civilization. How long did you let it ferment, and what salt %? Did you use rice paste or pear? Crunch looks on point, nice job tbh.
