Perfect for lunch, dinner, or as a side dish. Let’s make this quick Mediterranean style salad together. First, let’s whip up our refreshing tziki sauce. Start by grating one cucumber. [Music] Then squeeze out the excess water using a kitchen paper towel. This step is important to avoid a watery source. [Music] [Music] Next, chop about 2 tablespoons of fresh mint or dill. Either works beautifully. [Music] In a bowl, add the grated cucumber, your fresh herbs, two minced garlic cloves, 1 cup or 240 g of Greek yogurt, 1 tbsp or 15 g of lemon juice, [Music] and salt and pepper to taste. Mix it all well until creamy. [Music] Transfer the sauce to a glass bowl and chill it until we’re ready to use. Now for the salad. In a large plate or bowl, combine 1/4 cup cooked chickpeas, 1/4 cup cooked black beans, 1/4 cup sweet corn. I’m using microwaved frozen corn, 1/4 cup chopped red onions, 1/4 cup grape tomatoes cut in half, and one ripe avocado diced. [Music] Season with a pinch of oregano, salt, and pepper to taste. Drizzle over 1 tbsp of olive oil. To make this salad extra creamy, we’re mixing two tablespoons of mayonnaise, a squeeze of juice from half a lime, and a few spoonfuls of our chilled creamy tatsiki sauce. Toss till it’s all glossy.
