Was searching through here and a few mentioned Alouette which sent shockwaves of nostalgia through me. Went twice, this was the first time at their old location in Gamle Bruggen which I preferred in both menu and setting.
This was a last minute booking which I was lucky to secure. I had flown to and from Aalborg in recovery from a full arm sleeve which took three full day sessions. Got the wine pairing (not the best), but there was a moment when my tattoo peeked from my sleeve and I was forced to exhibit my arm to the entire kitchen and staff for a moment. As a result, I received some additional complimentary drinks on top of the pairing.
This was also after a side quest to Christiania so everything was heightened. I'll leave you to interpret that.
From what I remembered from the menu below:
- Norwegian scallop
- Japanese quince tartlet with fjord squid, fired and smoked kosho, and chrysanthemum kombu
- Pain au lait with apple and smoked bacon fat butter (not pictured)
- Tomatoes, dehydrated and rehydrated with black currant
- Hokkaido pumpkin and black label caviar in blue mussel stock (highlight of the meal)
- Japanese stew
- Danish pork loin and young leeks, miso and leek emulsion
- Apples and bee pollen sweet tart
- Strawberries and woodruff tart with petit four
