Ingredients:

195g all-purpose flour
150g castor sugar (you will need some extra to sprinkle on top of the muffins)
¼ tsp salt
2 tsp baking powder
80ml coconut oil
1 large egg
80ml milk
1 ½ tsp vanilla extract
200g blueberries (fresh or frozen)

This recipe for blueberry muffins is the only one you will ever need. They are so light and fluffy with a golden and crunchy muffin top. The burst of blueberries is so delicious and full of flavour that these muffins will not last long!
