The renowned Spanish chef Dámaso Vergara, who has worked for international figures such as David Beckham, has broken his silence. He has done so to make a revealing confession that has left no one indifferent. “They’ve never been that dazzling,” this culinary expert has stated.
His gastronomic proposal is based on classic-rooted cuisine. He brings back flavors that remain in memory and gives special care to the raw ingredients. That is the essence that defines the experience at his Valladolid establishment.

However, although his business has been open for quite some time, it was not until now that his name has made several headlines. All after it became known that on May 3, he was responsible for preparing a banquet for chef Gordon Ramsay.
This meeting took place at the renowned Vega Sicilia winery, an emblem in the world of Spanish wine. However, what Dámaso Vergara least expected was that Victoria and David Beckham would also enjoy his creations.
“Pablo[president of the wineries]called me to tell me to do my best because I had to cook for a chef. But I didn’t know David and Victoria Beckham were coming too,” he said.

Spanish chef Dámaso Vergara often collaborates with the wine entrepreneur to treat his guests. However, he has admitted that “they’ve never been that dazzling.”
His cuisine is distinguished by game dishes, seasonal vegetables, traditional stews, and offal preparations. Those specialties were exactly what David Beckham and his companions tasted.

As Dámaso Vergara himself has confessed, Victoria Beckham chose a white fish as her main course. She also tried Tudela de Duero asparagus grown by Luis San José, a renowned supplier in Spanish haute cuisine.
The tasting for the businesswoman and former Spice Girls member ended with peas, Guetaria lágrima, and Huelva white shrimp. All focused on fresh, seasonal products.
Meanwhile, David Beckham and Gordon Ramsay chose much more intense dishes. They chose tripe, ham croquettes, and oxtail with cabbage, which were the main dishes at their table.
In addition, to pair this sumptuous feast, that day they served vintages of Vega Sicilia Único from 1975, 1999, and 2014, years tied to personal moments in the Beckhams’ lives.
The highlight of the meal came with a traditional dessert, some torrijas that put the finishing touch on the evening. This gathering of friends coincided with an important celebration, since just one day earlier, David Beckham had turned 49 years old.

Dámaso Vergara’s final assessment could not have been more positive: “They liked the tripe, to the point that Gordon Ramsay was eclipsed.” “You can tell they’re people who are used to traveling and eating in many places,” he added.
Among the awards this well-known Spanish chef has received are a Sol from the Repsol Guide and a mention in the Michelin Guide. His menu changes every month, with six or seven new items, always adjusted to the product calendar.
In addition, the menu is recited in the dining room and the diner chooses what they want to try, “but nothing fixed, they choose it themselves.” The only thing that is never missing is his tripe, now with luxury ambassadors, all for an approximate price of €70.
