Banana Walnut Bread
Ingredients:
1/2 Cup Butter (1 Stick) Softened
1/2 Cup Brown Sugar
1/2 Cup Granulated Sugar
2 Large Eggs
2 Teaspoons Vanilla Bean Paste ( or Extract)
3 Ripe Bananas
1 Cup All-Purpose Flour
1/2 Cup Quick Oats
1 Teaspoon Baking Soda
1 1/2 Teaspoons Baking Powder
3/4 Teaspoons Salt
1/2 Cup Sour Cream
1/4 Teaspoon Cinnamon
1/2 Cup Chopped Walnuts
Equipment
Stand Mixer (large bowl and whisk if you don’t have a stand mixer)
9 x 5 Loaf Pan
Instructions
1. Line your baking pan with parchment paper and preheat the oven to 350 degrees F
2. In a stand mixer or large bowl beat the butter until smooth. Add 1/2 cup brown sugar and 1/2 cup white sugar and cream together ( beat it for about 2 minutes until it is fluffy), making sure to scrape the sides and bottom of the bowl.
3. Add 2 large eggs and 2 teaspoons vanilla bean past. Beat well until incorporated, again scraping the sides.
4. In a small bowl, use a fork mash the 3 ripe bananas. Add the mashed banana to the butter mixture and mix until incorporated.
5. Into a separate bowl sift 1 cup flour, 1 teaspoon baking soda, 1 1/2 teaspoons baking powder, and 3/4 teaspoon salt. After those are sifted remove the sifter and add 1/2 cup of quick oats and 1/4 teaspoon of cinnamon. Then add all dry ingredients to the mixer of wet ingredients and mix until just combined.
6. Lastly fold in the 1/2 cup sour cream and 1/2 cup chopped walnuts.
7. Pour the batter into the prepared pan and smooth out the top.
8. Bake at 350 for45-55 minutes. Every oven is different so you can start checking with a wooden skewer at 45 min to see if the center is cooked through. Add time if its not cooked through all the way until the skewer comes out clean from the center of the loaf.
9. Let the bread rest to cool at least for 20 minutes before slicing into it.
10. It can be stored covered on the counter for up to 2 days. After that store it in the fridge.

Hi, I’m Kado and welcome to my kitchen. Today I’m going to be sharing my banana walnut bread recipe. It’s fluffy, it’s walnuty, and has just the right amount of sweetness. This banana bread recipe is dangerously good. As soon as it’s out of the oven and just a little bit cool down, I start picking at it one slice at a time until I pretty much finish the whole thing in one day. It’s great with coffee in the morning or just throughout the day for a little sweet treat. Let’s bake it together. [Music] First thing I start with is prepping my baking dish. I like to line it with parchment paper to make it really easy to remove from the dish. Next, I’ll set my oven to preheat to 350°. [Music] I’m going to use my mixer for this recipe, but if you don’t have one, you can mix all the ingredients by hand in a bowl with just a whisk. I’m going to fit the mixer with the paddle attachment and mix the wet ingredients first. I’ll start with one stick of butter and mixing it for a minute or two until it is all softened. Then I’ll add half a cup of brown sugar and half a cup of white sugar. [Music] Now we’ll mix the butter and sugar on medium speed for 2 to 3 minutes until it is fluffy and all the sugar is mixed into the butter. Make sure to scrape down the sides and the bottom of the bowl to make sure that all the butter and sugar are incorporated. [Music] I’ll mix it for a few more seconds until it all looks well incorporated. Do you know what the secret ingredient is to this channel? You guys hitting like and subscribe. Oh, and thanks. You guys are the best. Next, we’ll add the two eggs in. I like to crack them one by one into a separate bowl just in case any eggshells fall in. And on the second egg, a piece of eggshell did fall in, which is why I like doing this trick. It’s so much easier to fish them out of the bowl than it is from the mixer. And the easiest way to remove the shell is to use one of the big pieces of the shell to scoop them out. Next, we’ll add in the 1 teaspoon of vanilla bean paste. If you don’t have this, you can also use vanilla extract. Now, we’ll mix in the eggs and the vanilla into the sugar and the butter until it’s all incorporated and smooth. Again, [Applause] here we’re going to go ahead and scrape down the sides of the bowl just to make sure that anything on the bottom and the sides that hasn’t been mixed in gets incorporated well. Next, we’ll take the three bananas and mash them with the back of a fork until they are really broken down. And then we’ll add them to the mixer. [Music] And now I’ll just give that a quick mix before adding in the dry ingredients. [Music] Now we’ll prepare the dry ingredients. We’ll add the 1 cup of allpurpose flour, 1 tsp of baking soda, 1 and 1/2 tesp of baking powder, and 3/4 teaspoon of salt. I like to sift the dry ingredients to make sure that there are no lumps. After those ingredients are sifted, I add in the half a cup of oats and the 1/4 teaspoon of cinnamon. And then I add all that into the mixer with the wet ingredients. I’ll give that a mix just until everything comes together. Then I’ll chop the half a cup of walnuts. I just want to make sure that they are all roughly the same size here. [Music] Last thing we’ll do is add the half a cup of sour cream and the walnuts. We’re going to go ahead and fold it in by hand with a spatula until you don’t see any more streaks of sour cream in the mix. From there, we’ll place the batter into the lined baking dish. [Music] I like to spread it out into the corners to make sure there’s no gaps and smoothen the top. Then we’ll bake it in the oven for about 45 minutes. [Music] After 45 minutes, I’ll take a long wooden skewer and test the middle to make sure it’s cooked through. All ovens are a little bit different, so if yours needs a little bit longer, just add some time until the wooden skewer comes out clean. Once it’s done baking, I do usually let it sit on the counter for about 20 minutes just to cool down. This is just to help it firm up so we can take it out of the dish and slice it. Now that this one is nice and cooled down, we can take it out of the pan and slice into it. Wow, it’s still a little warm and so delicious. It’s super fluffy, not too dense, and you can taste the sweet banana. You also have the crunch and the nuttiness from the walnuts. It’s just such a good combo of flavors.
