Recipe:
230g water
200g pumpkin puree
100g starter
40g maple syrup
510g bread flour
20g salt

Inclusions: brown sugar-nutmeg-cinnamon, mini semi sweet chocolate chips, regular size milk chocolate chips

    Did you weigh your inclusions or just measure with your heart? (I do both so no judgement! Only wondered if there were specific amounts you used. ☺️)

    I’m not sure how to edit my post!
    I did 4 sets of stretch and folds every 30 minutes.
    Proofed on counter for 10 hours
    Added inclusions and shaped dough at the 10 hour mark
    Proofed overnight for 8 hours
    Preheated my oven to 500 with Dutch oven inside
    Baked dough with lid on at 450 for 30 minutes
    Took lid off, baked for 15 minutes at 400 with a pan on the bottom rack

  6. This an extremely low hydration loaf yeah? Is your regular recipe 230g? Or is purée pretty high hydration? How wel spread is everything if you only shape.

    Crumb or inside shot please don’t do me like this
