Why I don’t use this preparation more I have no idea. I don’t think I’ve ever had an en papillote dish that wasn’t outstanding and it’s so simple to execute.

If you don’t mind, could you walk me through the steps for preparing this? I’ve got some mangrove snapper fillets in the freezer right now that I might want to use for this.

Beautifully done. That is my favorite snapper. I like it much better than red snapper (can be fishy) and yellowtail (softer flesh).
I also like frying the 12-14″ sized fish whole or stuffing and baking!
